The zucchini is a very efficient crop! And chefs know this. Everything can be used, from the leaves to a fully grown zucchini and everything in between. The flowers of the zucchini are very popular in restaurants. They are usually dipped in a tempura batter and deep-fried. But the young fruit is also very tasty and can be used in a variety of ways in dishes. We visited our partner Johan Zwinkels of Courgette Fleur. He produces all the zucchini specialties you can think of!
Various products from one plant
As mentioned before, all kinds of products come from the same plant. So there can be a full-grown zucchini, baby zucchini, male flower and female flower on the plant at the same time. Super efficient!
The growth of the crop
You may have heard that Bamboo is a plant that grows very fast. It can even grow up to 90cm per day (under ideal conditions). Now the zucchini is not that fast, but a it can certainly grow several cm per day which is also very fast we think!
This has its advantages because a plant can produce quickly and a lot, but it also brings challenges. Johan knows all about that. When he walks around his greenhouse early in the morning, he can estimate what specialties he has available that day. If he does another walk around in the afternoon, the numbers will be completely different again because the flowers and fruits continue to grow! Then the baby zucchini that was ordered is suddenly no longer a baby ???? .
During the season, the crop is also renewed once. The plants are then "used up" and no longer provide enough or good quality produce. Because it is a fast-growing crop, new plants can be planted and the season can continue.
