Full of vitamins
The term ‘leafy vegetables’ covers all plants with edible leaves, and actually includes the brassicas too. So as you can imagine, there are quite a lot of leafy vegetables – such as lettuce, spinach, pak choi and chicory, but also purslane, Lollo Rosso and frisée lettuce. Leafy vegetables are super healthy, which is another good reason to experiment with lesser-known types!
